SBW Dichotomy Shiraz Mataro Multi-Region 2023

Each vintage, our winemakers keep a few special barrels aside allowing them to experiment with various varietal, vineyard and regional compositions. These wines are as limited as they are unique and as such, are generally only made available through our cellar door.

After the berries were harvested, they spent 10 days fermenting on skins separately, with Mataro comprising 15% whole bunch. After fermentation, the Shiraz component spent 15 months in oak (20% new) and Mataro spent 9 months in oak followed by stainless steel, before both components were blended.
